Our story
The founders of Robataya Izakaya set out to bring diners the most authentic form of Japanese charcoal grilling. Unlike many restaurants that use modern grills or skip charcoal entirely, we follow the traditional method learned in Japan—using a century-old irori hearth. This technique preserves the juiciness, flavour, and aroma that define true Japanese cuisine.

What is irori?
An “irori” (囲炉裏, 居炉裏) is a sunken hearth (fireplace) built at the centre of homes of the Japanese many years ago. The irori is used for cooking or to keep warm during winter.
What is Robatayaki?
Robatayaki (炉端焼き, literally "fireside-cooking"), refers to a method of cooking in which premium pieces of meat or seafood are cooked at varying speeds over hot charcoal. Robatayaki originates from a centuries-old country style of cooking by northern Japanese at home around a communal hearth (irori). This method of grilling meat or seafood on an “irori” has been incorporated into many restaurants in the northen region of Japan and is called Robatayaki.

We are also one of the few Japanese restaurants which serve fresh air-flown seafood imported directly from Japan.
Three-way cooking
One of our speciality is we offer three-way cooking for every fish the customer select from the air-flown seafood basket. In other words, the customer pay for one price of the fish and get three types of dishes. Popular choices for three-way cooking are sashimi, robatayaki, and bone soup whereby we use half of the fish for sashimi, another half for robatayaki (grill), and we use the remaining part of the fish (bone) for cooking the soup.
